In a large mixing bowl, combine the flour, salt, yeast, cinnamon, and sugar. Mix well with a whisk add the raisins and warm water.
Mix well until all the flour and water are combined into a soft dough
Cover with plastic and let it sit on the counter all night or while you are at work (6-8-10-or 12 hours)
Preheat oven to 450 degrees
Get your loaf pan or crock ready and line it with parchment paper.
Place the dough in the loaf pan and cover with another loaf pan. Bake covered 30 minutes.
Remove cover and bake another 15 minutes.
The paper will allow you to remove it from the pan in a couple of minutes. Let it cool well before slicing and store any leftovers in the refrigerator. When ready to use a slice, toast or heat in the microwave 10 seconds to soften.
