Ingredients
  

  • 2 Cups Bok Choy Chopped
  • 1 Small Red Onion
  • 1 Small Zucchini Chopped
  • 1 Bunch Broccoli
  • 1 Carrot
  • 2 tsp. Rosemary
  • 1 tsp Himalayan Salt
  • 1/2 Tsp. Pepper
  • 1 Can Black Beans Rinsed and Drained
  • 1 Tsp Coriander
  • 4 Cups Vegetable Broth
  • 1/2 Cup Quinoa Rinsed and Drained

Instructions
 

  • In a soup pot combine the onions, zucchini, & Bok choy, sauté in a little water until tender.
  • Add the broccoli, carrots, rosemary and spices, then the beans, broth, and rinsed quinoa.
  • Simmer for about 30 minutes and top with hulled pumpkin seeds, sesame seeds, or sunflower seeds.
