Bok Choy & Black Bean Soup

- 2 Cups Bok Choy Chopped
- 1 Small Red Onion
- 1 Small Zucchini Chopped
- 1 Bunch Broccoli
- 1 Carrot
- 2 tsp. Rosemary
- 1 tsp Himalayan Salt
- 1/2 Tsp. Pepper
- 1 Can Black Beans Rinsed and Drained
- 1 Tsp Coriander
- 4 Cups Vegetable Broth
- 1/2 Cup Quinoa Rinsed and Drained
In a soup pot combine the onions, zucchini, & Bok choy, sauté in a little water until tender.
Add the broccoli, carrots, rosemary and spices, then the beans, broth, and rinsed quinoa.
Simmer for about 30 minutes and top with hulled pumpkin seeds, sesame seeds, or sunflower seeds.
