Fantastic Fiber Ideas!

I’m always excited to share high quality fiber recipes with you. When we understand the benefits of this tasty item for fullness, gastrointestinal motility, and gut health, it’s even better!

It is estimated Americans are getting half of their recommended dietary fiber intake each day. USDA sources place the number of grams required daily to prevent disease at around 25 grams for women and 38 for men. In addition to that, a large population study reveals a high fiber diet is associated with lower all-cause mortality. (1)

As a person who has suffered from IBS for many years, taking control of my diet mattered to me. I can only stop on the side of the road and jump over a guardrail for emergencies a certain number of times before I realize…

What the heck did I just eat to cause that and how do I get it under control?

It was also problematic watching people die, before their time, from chronic disease in my career as an intensive care nurse. I did not want to be one of my patients!

Some careful observations need to take place, and soon. The delicacies I enjoyed so often, were deceptive food.

When you sit down to eat with a ruler, observe carefully what is before you, and put a knife to your throat if you are given to appetite. Do not desire his delicacies, for they are deceptive food.

Changing my diet twenty years ago and getting my stress under control with prayer made a huge difference. So, I am confident you can do it too! God’s plans for you and me are good, and He gives us everything we need in the garden to restore our health.

My ways of including optimal amounts of fiber in my diet are:

Fruits and vegetables, at least 5-6 per day.

Chia Seeds on my eggs, in my muffins, on my salads.

Quinoa in my eggs with kale or spinach.

Quinoa on my salads, or in my soups.

Flaxseed meal in my tortillas, muffins, multi-grain bread recipes.

God made some easy take-along items to feed your gut microbiome and help you and I feel full longer.

Since we have to watch pesticide spray on all of the items I sprinkle them with baking soda, gently rub it over the surface, then rinse with filtered water. The baking soda works like sandpaper to get the wax off your grapes and apples. I love using it!

If you are worried about natural sugars in fruit, always add some spices and protein to lower the sugar spike and insulin burst from your pancreas.

For example:

  • **Peel back your banana, sprinkle on some cinnamon, and grab a few walnuts to eat with the fruit. Or add the banana to your vegetable and protein smoothie.

  • **Strawberries and full fat- sugar free–yogurt with walnuts and a dash of cinnamon is good too!

  • **Blackberries, Blueberries, Raspberries with a side of cottage cheese and black pepper.

  • **Cardamon sprinkled Grapes, and mozzarella slices or sticks…oh yum!

You get the idea. You are feeding your cells the antioxidants they crave and lowering inflammation throughout your body (the root cause of disease).

God will heal your soul through Jesus and your body through His provision in the garden, my friend. Just trust Him with all your needs and pray for the desire to consume more of Him and what He provides.

I hope these recipes are helpful in jump starting your fiber ideas! They sure are fun to incorporate in any wellness plan. Mostly because when we don’t feel well and start connecting it to what we eat, we then understand what we’ve been missing. .

The fiber is lacking in the fast-paced, ultra-processed food plan.

Ditch that plan, my friend, and my guess is you, and your children, will start feeling better within a week!

Turkey & Chicken Goetta

My late stepmother, Doris, loved to eat Goetta. The sausage oat mixture was a frequent breakfast item for her. So, the other day when I was failing miserably at making tasty nitrate-free turkey sausage patties for my hubby, I decided to look up a recipe for Goetta.

Following a food.com recipe, I did the following:

  • Place 1/2 cup of oat groats in a saucepan of 1 1/2 cups of water, 3 bay leaves, 1/2 teaspoon of salt, 1/2 teaspoon of pepper.
  • Boil for one hour on low until they are tender.
  • The water almost boils off the groats, and there is a little left over.
  • I substituted 1 pound of ground turkey for pork and pureed 1 cup of leftover chicken for added filling.
  • The meat is added to the oats and stirred a bit, browning slightly. Preheat the oven to 350 degrees.
  • Add 1 tablespoon of olive oil, another 1/2 teaspoon of pepper and salt.
  • Oil a 9×13 baking dish with olive oil and place the meat mixture in the pan. Brush on another tablespoon of olive oil.
  • Bake for 1 hour. Then cut into squares.

It was delicious! I felt like Doris was with me the whole time cheering me on!

Devotion

She is at home with the Lord and gathered with her people. It reminds me of Abraham breathing his last in Genesis and being gathered to his people.

God establishes a covenant with Abram for the generations to come. Abram, (childless at 85) couldn’t comprehend what God was saying, yet when God puts him in a deep sleep and shows him the slaves in Egypt 400 years and their coming out of the land with great possessions, he understands.

This text is written to the many children (descendants) of Abraham to show them God’s faithfulness.

I appreciate the nugget of information about Abraham’s life after death. God says, “…as for you, you shall go to your fathers in peace. I’ve looked back through the chapters of Genesis and believe this is the first mention of life after death.

 As for you, you shall go to your fathers in peace; you shall be buried in a good old age.

Gen 35:29 And Isaac breathed his last, and he died and was gathered to his people, old and full of days. And his sons Esau and Jacob buried him.

When Jacob finished commanding his sons, he drew up his feet into the bed and breathed his last and was gathered to his people.

The text teaches me God has a plan for my soul and your soul, long after we depart from this world. The idea of being gathered to my people not only gives me hope to be with God forever, but also a cherished loved one I miss dearly.

Turkey Goetta & Spinach Panini

Remembering her love of Goetta inspired me to use the No Knead Bread to make a Goetta Panini Sandwich.

Goetta Panini Sandwich

  • 2 Slices Easy No Knead Bread
  • 3 Squares Turkey & Chicken Goetta
  • 1/2 Cup Spinach & Kale Blend
  • 3 Large Slices of Cucumber
  • 2 Tbsp Yogurt
  • 1/2 Tsp onion powder
  • 1 Slice Havarti Cheese
  1. In a skillet place a teaspoon of ghee and add the bread.

  2. Place the Goetta slices on one slice and the spinach/kale on the other.

  3. Cover with a lid until all are heated through.

  4. Mix the yogurt with the onion powder.

  5. Get the sandwich out of the pan and place it on a plate top with the cheese, cucumber, and yogurt sauce.

  6. Enjoy!





The NOT So Amazing, But Good… Sugar Free Brownies

I know, you just want to click to see what is NOT so amazing, right? LOL, I found a sugar free banana brownie recipe on YouTube and wanted to try it, my way.

The original recipe calls for 3 bananas ( I made the mistake of using green bananas, so make sure yours are very ripe for the added sweetness) 1/2 cup of cocoa powder, and 1/2 cup of peanut butter. If you want that recipe, go for it!

I wanted mine a little more exciting, and power packed with protein, omega 3, and fiber.

So, here you go! Remember cocoa has antioxidants like flavanols that are anti-inflammatory. Therefore, since there is no refined white sugar in these sugar free brownies, they will not cause you pain. That’s a win, for sure! It is also helpful for increasing nitric oxide in the body, a powerful vasodilator that has cardioprotective measures. (1)

Cocoa powder has also been shown to feed the good gut bacteria to stimulate an anti-inflammatory pathway!

Friend, what God puts in the garden is good! The plans he has for you and me are just as spectacular as the plans He had for Jeremiah, when we place our trust in Him!

Recipe for Sugar Free Brownies

The NOT So Amazing, But Good… Sugar Free Brownies

A simple sugar free brownie recipe adapted from a YouTube video

  • 3 Bananas
  • 1/2 Cup Organic Cocoa
  • 1/2 Cup Organic Natural Peanut Butter
  • 2 Tbsp. Hemp Seeds
  • 2 Tbsp. Chia Seeds
  • 1/2 Cup Walnuts
  • 1 Tbsp. Vanilla
  • 1 Tsp. Cinnamon
  • pinch Salt
  • 2 Tbsp. Dark Chocolate Chips
  1. Preheat oven to 350 degrees

  2. In a bowl mash the bananas with a fork. Add the cocoa powder, cinnamon, vanilla, and peanut butter. (At this point if you decide you want them sweeter, you can add 2 tablespoons of honey or maple syrup (or a 1/2 tsp liquid stevia).

  3. Place the batter in an 8×8 pan lined with parchment paper.

  4. Sprinkle the hemp seeds, chocolate chips, chia seeds and walnuts on the top and press down into the batter slightly.

  5. Place them in the oven and bake for 20 minutes. Cool then remove from pan and cut into squares. I store mine in the fridge!

    They are yummy!

An Apple a Day

Growing up I heard the saying, “An apple a day keeps the doctor away.”

It does not surprise me that God’s design of this delicious fruit would garner such a saying. Remove the pesticides man slathers over it for marketing it around the world, and you and I have a near perfect fruit.

Apple peels are rich in quercetin, which is the lovely polyphenol antioxidant that battles the most popular virus of our day. However, this antioxidant’s power goes beyond viral protection. Numerous National Institute of Health studies credit it with neuroprotective properties, reducing endometriosis, battling Helicobacter Pylori, and reducing inflammation.

Here is what a comprehensive literature review reveals about the apple:

  • Reduced cancer risks were noted in 2004 with 6,000 participants. Estimated reductions in cancer risks for individuals consuming apples was oral (18%) esophagus (22%) colorectal (30%) larynx (41%) Breast (24%) ovary (24%)
  • A 2007 study of 478,590 male and female participants in 10 European countries showed participants consuming apples and pears had a significant reduction in lung cancer
  • In animal studies with metastatic colon caner cells, apple extracts inhibited cancer cells by 50%
  • Also in animal studies, there was a 44% reduction in mammary tumors of rats fed apples
  • Human studies showed 43% reduction in coronary deaths
  • In animal studies apples reduced total cholesterol 24% and total aortic fatty lesions by 48%
  • In 65,535 adult women 10% reduction in the risk of asthma
  • Maternal intake of apples at 32-week gestation showed decreased incidence of asthma in their offspring in a five-year follow-up
  • Apple juice prevented cholinergic depletion that is associated with cognitive decline
  • 28% lower risk of Type 2 Diabetes with the consumption of 2-6 apples per week
  • It was helpful in weight loss
  • It reduces loss of calcium to retain bone health (1)

The evidence of God’s power and His divine nature is continually revealed through the things that He made. Science proves it, over and over again as they try to figure out how fruits and vegetables prevent disease.

Hearty Apple Breakfast

The clear message for you and me, is to enjoy what God provides in nature to heal and sustain us rather than reaching for commercialized products in plastic bags that continually rob our health. Retraining our minds and our taste buds may take some work, but it will be well worth the effort.

Not only can we pause and think about our daily choices of fruit, like apples, for good health; we can intentionally associate opposite choices with poor health.

When you and I start our day with an apple and peanut butter (or a handful of walnuts) we spark our energy stores, satisfy our hunger, and get our day started with antioxidants to help us fight chronic disease.

Apple in Our Arsenal

An apple a day is also a wonderful addition to our diets when we are battling food addiction or chronic disease.

The items we grew up thinking were beneficial; we are now finding are not! In fact, the “Western Diet” of high fat fries, burgers, shakes, fried chicken nuggets, pizza, and macaroni and cheese, and packaged foods are contributing to the majority of inflammatory diseases in our country. (2)

We can even become addicted to the monosodium gluconate, sugar, cheese, and additives in this food. When we become aware of this food’s toxicity, we can align our eating patterns with God’s Word and listen to His warnings about putting things before Him.

“And your ears shall hear a word behind you, saying, “This is the way, walk in it.” When you turn to the right or when you turn to the left.”

When God’s Word says, “This is the way, walk in it.” I know he has my best interest, and yours, at heart.

Commands, rules, and restrictions in both in a spiritual and physical sense, may seem too intrusive on our freedom. However, they are designed for our protection and flourishing.

God knows my heart, what its drawn to and how easily I can trust in “things” for comfort and satisfaction. Therefore, when all those “things” are applied to an empty place in my soul, I still feel lost, lonely, and lacking peace.

However, when I listen to and practice the commands to honor others, have self-control, not put material things before God, not envy or covet what others have, or talk about people in a negative way, I am at peace and content with my life.

My body will also reap the rewards of making better choices.

I will enjoy an apple a day or berries and hope to repair the lining of my blood vessels.  The opportunity to choose high fiber foods with vitamins and minerals over empty calorie sweets becomes ingrained in my mind as valuable.

My friend, when you and I have the power of the Holy Spirit connecting our behavior to our values, we will have victory over food addiction.

Top 6 Foods Causing Inflammation

Do you ever eat something and feel so miserable afterward you wonder, “What in the world caused that!?”

My guess is, you probably have. There are so many foods that can cause an allergic reaction or an inflammatory response, I thought it might be helpful to post a brief cheat sheet of the top culprits of each.

Keep in mind, this is not an exhaustive list, and some sources vary in their choices of foods that cause reactions. There are also multiple environmental factors affecting our food; like, pesticides, herbicides, preservatives, colorings, flavorings, etc.

Top 6 Foods for Causing Inflammation and Why it Matters

Inflammation in the short-term is good, it’s a part of our bodies defense system. However, continuous exposure to inflammatory foods leads to chronic conditions like arthritis, diabetes, high blood pressure, and heart disease. Even more alarming is the connection of inflammation to Parkinson’s, asthma, mental illness and depression. (1)

 However, most sources agree on the following six foods as causing reactions.

Intakes of apple juice in children 2-9 years old show 5 times more incidence of asthma. (2)
Young adults drinking 5 drinks or more per week are 3 times more likely to have arthritis. (3)
Excess sugar consumption correlates to the increase in Nonalcoholic Fatty Liver Disease and Prediabetes (4)
Trans Fats It’s important to understand the differences in naturally occurring trans-fat in animal products like milk and meat (supported as healthy by some sources and demonized by others) verses harmful chemically altered, hydrogenated, trans fats like margarine and vegetable shortening.
Intake causes excessive production proinflammatory cytokines and increased metabolic syndrome and heart disease (5)
The relationship to diabetes is present in some human studies but not in others.
It lowers good cholesterol (HDL) and impairs blood flow in the arteries. (6)
Vegetable and Seed OIls Seed oils are high in omega-6 fats, which is not bad in itself, however, the overuse of them in our food supply make the ratio of Omega-6 to Omega-3 inflammatory. We want a 2:1 ratio for best health and we’re getting around 15-20:1, according to most sources. Also, these oils are mechanically removed, bleached, and deodorized in order for them to be consumable. Harsh chemicals are used to do make this oil “look clean”. Proceed with caution!
Refined Carbohydrates Again, ultra-processed, refined white flour, and sugar cause blood sugar spikes, and increase inflammation. These are found in glazed doughnuts, cakes, cookies, breakfast cereals, and fast-food restaurants. Avoid, avoid, avoid,
Excessive Alcohol The American Heart Association recommends one alcoholic beverage for women and no more than two for men in a day. That means, an 8-ounce beer, 1 ounce of hard liquor, or 6 ounces of wine. Drinking more than this amount has been implicated in increased heart disease and cancer.
Processed Meats Sausage, bacon, hot dogs, lunchmeat and other ultra-processed meat items contain monosodium glutamate, nitrates, and nitrites that are known to cause cancer and inflammation.

I like a short list like this because it makes it easier to eliminate potential offending items. If one of my clients in in chronic pain, has digestive issues, or has another chronic condition, I want to help them find the underlying cause. 

A short list is easier to use for identifying inflammation triggers, remove them for a few weeks, and give the cells rest. It is a simple way to determine if they feel better when the foods are not consumed.

After two weeks is up, they add one of the items back and see if it causes problems. If yes, they know to not eat it. If no reaction, they add another item the next week and see if their body reacts to it… and so on and so forth with the remaining items.

When we are mindful of how our bodies react to certain foods, we can begin intentional eating that may help heals us at the cellular level. 

God put over 8,000 antioxidants, plus vitamins and minerals in the plants to sustain and nourish us.  The mutations and flaws in the human race over time, alongside the tampering of our food supply has contributed to allergic reactions, with a few of these natural foods.

Momma’s Power Over Her Family’s Health Begins Here

Mommas and grand mommas do you understand the potential power you have over your family’s health?

“Train up a child in the way he should go; even when he is old, he will not depart from it.”

Although this may be tough at first, when the whining, begging, and tears of little ones aside their health is worth the effort. When the junk is not present in the house, you and I have all the power over better choices.

And it starts in the grocery store by filling the cart with garden goodness and not bringing junk home.

God’s plan for you, me, and our children is to thrive. Therefore, we can be thankful He put all the healing properties we need in the food He created.

Culturally, for me in rural Kentucky, growing up with a high sugar breakfast, lunch, and snacks were the norm. So, when I consider this statement from the CDC’s website, I cringe inside:

“Empty calories from added sugars and solid fats contribute to 40% of daily calories for children and adolescents age 2–18 years—affecting the overall quality of their diets. Approximately half of these empty calories come from six sources: soda, fruit drinks, dairy desserts, grain desserts, pizza, and whole milk. Most youth do not consume the recommended amount of total water.”

Although the choices of my culture can be eliminated at the grocery store, wise marketing and strategically placed items of little nutrition are still present and tempting.

They are placed within view on every isle of the store. Not to mention, television ads are geared towards our little ones.

Momma’s Power to Resist

How does a momma start to change the culture of her home with this onslaught of persuasion making life easier for her?

One way is prayer, another way is knowledge.

When you and I understand how damaging this ultra-processed food is to our child’s genetic code and his ability to fight chronic disease, we realize the value of filling our cart with God’s miraculous healing food instead.

As the tantrums and meltdowns begin at home, we can calmly take the child over to the cabinet or refrigerator and show him the apples, grapes, bananas, mandarin oranges, kiwi, and pineapple that are available.

We’re off the hook because we are not the villainous sugar depriver in his mind. A simple statement like, “Sorry honey, this is what we have to eat” is all he needs to hear.

Just like the myth of Santa roams through his childish mind, so does the myth overly processed food is satisfying and what he craves. Eventually, out of site will be out of mind, too.

Seeing the effects on his nervous system is also helpful in gaining knowledge, as seen in the diagram of handwriting samples below. How can a child think clearly with such frayed neurons?

The Benefits of Momma Gaining Power

Don’t get me wrong, removing ultra-processed food completely, may not be easy the first week. I remember changing my girls’ routine when they were around seven and nine years old. It took them a few days to get used to the lack of junk food in the house, but they survived.

Well, actually, they thrived.

However, for others, retraining the mind may be easier than retraining the taste buds. Not only that, but new taste and textures form slowly for children. Some sources say it may take 10-15 tries before they begin to like new things.

But offering very small amounts to the side of their plate instead of on the plate is a good way to get used to this as the new normal. Also, being careful not to force them to eat or take a bite, helps avoid power struggles where both of us leave the table defeated and upset.

Kids will eventually explore new items themselves out of curiosity, without mom or grandma pushing it on them verbally (2)

Oh, how I remember my own childhood and the reminders from my parents of starving kids in Africa! Missionaries came through church at various times throughout the year to show us pictures of these children, so I knew they were real.

Being thankful and grateful for our food is worth learning as a child and encouraging children to try new things, without guilt, is even more worthwhile. Teaching them how God placed vitamins, minerals, and antioxidants in food to help them grow works better than a guilt trip. It shows how much He loves them.

Children receive good reasons to try new things and momma has an arsenal of immune boosting support for the next round of illnesses that are sure to come.

Momma’s Power to Help Restore Gut Health

Common childhood infections of the ears and throat come alongside the use of antibiotics too, don’t they? This is understandable, because kids are young and developing their immune systems. Plus, they are exposed to bacteria and viruses all around them.

So, what’s a mom to do when several courses of antibiotics have also wiped out the good bacteria in their child’s gut?

Momma’s power to help restore this very important component of her child’s health is in her hands, too. Here are three ways I’ve learned help us get started:

  1. Increase a child’s intake of fermented foods

  • Kefir- a cultured milk drink that can be purchased plain and blended with fruit for a smoothie.
  • Fermented pickles
  • Sugar-free yogurt—the average yogurt for kids has 14grams of sugar, that is over 3 teaspoons!
  • Small amounts of kombucha— which is a fermented tea, a little sour, and naturally carbonated.

2. Include finely chopped onions and garlic and other root vegetables in meals

3. Explore ways to increase fiber rich foods in every meal

Sleep & Brain Health Starts in Youth

The wisdom of God’s Word is timeless in all areas of the mind and body. When I think of “eating the bread of anxious toil” in regard to rest and sleep, it makes me think of ruminating. Thoughts of a sour conversation, or words spoken carelessly by me or to me, replays over and over in my mind as I long for slumber.

You and I are to rest in Him, because He gives his beloved sleep. Anxious toil like that is not meant for us, or our children. We’ve all been through tough nights, alongside our kids, and all suffer for it. A recent study supports the relationship of good rest and brain health for our kids. The Lancet Child and Adolescent Health journal released new findings in July for sleep patterns and brain health in children, ages 9-10.

The study compared children getting nine hours of sleep or more per day to those getting less than nine hours and found those with less sleep have more behavioral problems. Stress, acting out, impulsivity and aggressiveness were noted, in addition to difficulty with memory, conflict solving, and learning. (1)

We see distracted behavior and memory difficulty in all age groups, don’t we?

Sleep Deprivation in Adults

  • Weight Control—Difficulty recalling names, forgetting why we left the room, and where we are headed are common actions, we find ourselves doing. But do we think about how slumber even affects our weight and calorie intake? A National Institute of Health study compared adults who get six hours of sleep (the control group) to those who received sleep counseling and improved their rest 1.2 hours and found the group with less sleep consumed on average, 270 extra calories. (2) Over time, this number of calories would significantly affect weight loss if participants could get some much-needed rest!
  • Physical Health—According to the National Institute of Health, a good quality night’s rest is necessary for repair of blood vessels, how our bodies react to insulin, our ability to fight infection, and it promotes growth hormone that allows us to heal and repair cells. (3)
  • Mental Health—Studies show that insomnia and sleep disturbances affect 50% of people with anxiety. (4) Researchers are experimenting with tools to increase slow wave sleep to help alleviate this profound disorder. It is also thought that norepinephrine and serotonin systems are affected by increased REM (rapid eye movement-a lighter sleeping state) activity and contribute to depression as well. (5)
Food for Better Sleep

Habits for Renewing the Body with Sleep

A restful night is so important for our brain (and overall) health; it’s worth exploring how to renew the body with its many benefits. I’ve been sharing tips for improving it on my Facebook and Instagram platforms this week. Foods that help us get that night of peace, turning off electronic devices, Wi-Fi, and laying our stress before the Lord are some of the tips shared on those platforms.

  • Tryptophan Containing Foods—The wonderful amino acid provided naturally by God has many benefits. Unlike its synthetic counterpart made by man that has side effects like belching, skin rashes, and cramping; the preformed tryptophan in food plays a major role in producing:
  • 1. Serotonin–mood stabilizer
  • 2. Melatonin–sleep stabilizer
  • 3. Kynurenine (metabolite used to produce niacin)
  • 4. Niacin– essential for brain and heart health.

Although more studies are necessary, there is potential benefit in eating fresh fruits and vegetables as opposed to junk food. Sugar saturated and refined carbohydrate intake is associated with poor resting patterns, but more so is the consumption of energy drinks. (6) Large amounts of alcohol also affect poor sleep patterns.

  • B Vitamin Foods—B12 has been found to increase melatonin plasma concentrations to help train the light/dark wake cycles. So, foods highest in B12 naturally, are lamb liver and veal liver. Whole foods like clams, sardines, salmon, trout, beef, and eggs follow close behind. I have several beef and egg recipes on the Strengthen Your Heart Blog.
  • Fatty Fish—-Although fatty fish increases vitamin D3 and omega 3 fatty acids, both of which are important for sleep regulation, there was not sufficient proof of improved sleep in one inmate study. Incorporating fish in a daily routine can be simple and easy with Fish Tacos.
  • Kiwi-–This delicious fruit given to participants before bed showed improved total sleep time and sleep efficiency in one study. Study subjects also kept a diary and reported less episodes of awakening after onset of sleep. You and I can easily incorporate this fruit in our daily routines with easy recipes like Kiwi smoothies or on morning yogurt.
  • Cherries–A two-week study of drinking eight ounces of tart cherry juice twice daily showed significant improvement in overall insomnia and waking after sleep onset. Another study of athletes showed two servings of 30 ml cherry juice increased circulating melatonin, and improved sleep duration and quality. (6) It’s anti-inflammatory properties may be helpful in aiding sleep, too!

I love how God offers simple solutions for our sleep wake cycle in the foods He created. His Word is truly uplifting too, when are looking for understanding. He is with us through our stress and concerns. I’m pretty sure that is why He tells us not to toil over anxious thoughts, but to rest, beloved!

Fresh-Milled Oat & Wheat Poptart

I’m trying every way I can to get the children around me to eat fresh-milled flour. It’s not easy! Because they are so used to the texture of refined white flour. Especially if they have some taste/texture issues and a sensory processing disorder. In most cases, I can’t persuade or bribe three of my little ones to make sense of the grainy flour enough to take the plunge. It hits their sensitive little tongues and somehow the texture signal fires out faster than the taste neurons do.

Comparing Fresh-Milled Oat & Wheat Poptart to Store-bought

My hope is these fresh-milled oat & wheat Poptarts will taste so good they’ll won’t notice the change in texture. After all, the real fruit filling and slightly sweet pastries pack a good amount of fiber, protein, minerals, and natural B and E vitamins to start their day. Mom can rest in the knowledge she gave her child a quality breakfast treat to meet part of his daily needs, without red dye 40, synthetic vitamins, and genetically modified oils and corn syrup found in a store-bought Poptart. Plus, they’ll reduce the sugar from 25 grams to 4.9 grams, that’s cutting over 6 teaspoons of sugar to one teaspoon!

To help parents prevent future heart disease in their children, it is recommended from the American Heart Association to limit sugar to 6 teaspoons per day for children and women, and 9 teaspoons for men (1)

Oat & Wheat Strawberry Poptarts

Best of all, making a child’s own treats teaches them life skills. Not only will they use their reading, math, and science knowledge to understand a recipe, the opportunity to teach them God’s loving kindness is also present. I want the little ones in my life to know how much He cares for them in the little things. His thoughtful provision of their every need is evident in the nourishing value of the food He created. I also want them to know the choices they make now impact their quality of life later. So, eating real food, without dyes, artificial flavors, preservatives, and fillers reduce inflammation of their cells and promote better mental and physical health.

Train up a child in the way he should go;

    even when he is old he will not depart from it.

Fresh-Milled Oat & Wheat Poptart

  • 1 Cup Oats (Fresh-Milled)
  • 1 Cup Wheat (Fresh-milled)
  • 1/2 Cup Butter (I have substituted chilled organic olive oil too, and it works just as well.)
  • 4-5 Tbsp. Kefir ( ( or almond milk, or water))
  • 1 egg (separated)
  • 1/2 Tsp. Salt
  • 1/4 Tsp. Cinnamon
  • 1/4 Tsp. Nutmeg
  • 1 Tbsp. Sugar

Filling

  • 1 Cup Strawberries ((Fresh or Frozen) Use any fruit you like!)
  • 2 Tbsp. Maple Syrup (Or honey)
  • 1 pinch salt
  • 1 Tsp. tapioca flour
  • 1 Tsp. vanilla
  1. Preheat oven to 350 Degrees

  2. Put your fruit in a small saucepan and place it on the stove on low, 1-2. Let it come to a simmer while you prepare your pastry dough but watch it and stir it occasionally to break down the fruit.

  3. Combine your flour, salt, sugar, cinnamon, and nutmeg in a mixing bowl and whisk well. Using a pastry cutter blend in the butter (or chilled olive oil if keeping it vegan). The dough will be crumbly but dry.

  4. Separate the egg and keep the whites for a brush over your pastry later. Add the yolk to the 4 tablespoons of kefir or milk substitute you are using to bring the dough into a formable pastry dough. If it looks dry, use the 5th tablespoon of milk. You can chill it for an hour if you like, then roll it out.

  5. Check on your fruit filling, it should be heated and ready to purée in a blender or food processor. The fruit should have enough liquid present, so you don't have to add water, that is why you are heating it very low. But some fruit with low water content, like blueberries may need a little (say 2 Tbsp.) water added. Use your best judgment without letting it burn.

    Once it is pureed, place it back on the stove and add the maple syrup or honey. It will still be too thin and watery, so add the tapioca starch and stir until the fruit thickens to a thick paste. Remove from heat and add vanilla, stir well and set aside until it cools and you work on your dough.

  6. Preheat oven to 350 Degrees

  7. Get your chilled dough out and place a large piece of parchment paper on the counter and another over the ball of dough. Roll the dough out thinly and evenly between the paper, then peel off the top layer of paper and cut off the outer edges. Form a square of the dough, then cut dough into small rectangles (about 2.5 inches by 3 inches). Use a fork to place small holes in the dough.

  8. Once you have your dough pieces cut place it on the parchment paper, hole sides down on a baking sheet. Spread a teaspoon or so of the fruit filling on the inside of the square, leaving about a 1/4 of an inch unfilled dough around the edges.

  9. Place the second piece of dough over the filling on your bottom square evenly and press the edges together with a fork. Brush with the egg whites and bake at 350 degrees for about 18-20 minutes or until golden brown.


As I type the instructions I think wow, this sounds complicated and difficult, but it’s really not. I’ll post a video. There are a few ingredients and steps to think about but assigning a child the task and asking them questions about how to create something better and more nutritious than a store-bought product will give them a sense of accomplishment.

I also think the time spent bonding together, laughing, tasting, and exploring new ideas is much more enjoyable than an evening filled with everyone in their own little electronic world. I pray you have that time together with your precious little ones! They grow up so fast, every moment with them will be cherished some day!

Loaded Blueberry & Quinoa Oatmeal

Are you looking for an easy breakfast that will keep you full all morning? Look no further! Here is a loaded blueberry & quinoa oatmeal you can enjoy quickly. Cooking grains or seeds like quinoa (that act like a grain) ahead of time for the week makes a meal ready in less than five minutes. It’s also healthy, filling, and delicious!

I’ve been a huge fan of quinoa for many years and use it instead of rice or pasta in most of the dishes I make. This makes sense to me because I’m not a big fan of either of those sticky starches. Quinoa, on the other hand, doesn’t have the same stickiness, it’s dry and fluffy, yet slightly on the crunchy side. It’s my kind of filler for any side dish or main dish. Plus, it’s loaded with good nutrition!

Benefits of Blueberry & Quinoa Oatmeal

As my vegan friends are aware, quinoa contains all the essential amino acids necessary to make it a complete protein. It is also rich in fiber, magnesium, potassium, zinc, choline, and betaine. It is higher in natural vitamin E and folate than any other grain-like breakfast dish. And combined with oats it provides a decent amount of calcium.

Take comfort knowing this is a wonderful gluten-free alternative for people with celiac disease, while it also provides a strong amount of protein for my vegan friends. It’s a win-win for us meat eaters too, because the way this bad boy feeds the good gut bacteria is phenomenal. It works as a prebiotic by supplying bioactive peptides and polysaccharides. During an in vitro study, dietary fractions of quinoa showed anticancer activity, bile acid binding, and radical scavenging activity. (1)

If you’re looking to improve your heart health, you’ll be happy to know, quinoa combined with oats doubles the cholesterol lowering impact of this breakfast bowl too. Don’t you love another good reason to eat well? A regular intake of blueberries and their anthocyanins help reduce the risk of cardiovascular disease, type 2 diabetes, improve weight maintenance and neuroprotection. (2)

The walnuts are heart protective and rich in omega 3 fatty acids, while pumpkin seeds are known to help lower LDL cholesterol in animal studies, and breast cancer in others. (3, 4). The additional benefits of these nuts and seeds make this loaded blueberry & quinoa oatmeal bowl a very nutritious option for breakfast. Yes! His counsel stands forever, and the plans of his heart are clear! His Word assures you and I He is for us and not against us. Over and over, we see in the bible two clear things:

1. His love endures forever, and

2. He loves righteousness and justice..

The psalmist says, “the earth is full of the steadfast love of the Lord”. He proved it by becoming a man and dying on the cross for you and me. And he proves it daily in the gift of healing through His gardens around the world. He is worthy of praise!

Loaded Blueberry & Quinoa Oatmeal

  • 1/4 Cup Oats
  • 1/4 Cup Quinoa (Precooked)
  • 1 Tbsp. Raw Pumpkin Seeds
  • 1 Tbsp Walnuts
  • 1 Tsp Cinnamon
  • 1/4 Cup Water
  • 1/4 Cup Blueberries
  • 2 Tsps. Maple Syrup (Optional)
  • 1/4 Cup Kefir
  1. In a medium bowl add the 1/4 cup of oats and water, plus cinnamon. Stir and heat according to package directions. This takes 1 minute in the microwave (if you use microwaves).

  2. When done, add the quinoa, pumpkin seeds, walnuts and blueberries and stir.

  3. If desired, top with maple syrup then the kefir and enjoy!

Sweet Potato & Asparagus Frittata

I had left over asparagus sauteed in garlic from dinner last night and thoughts of adding it to a sweet potato frittata was born! It’s a simple, delicious, dairy free and gluten free dish for a brunch my friends and I are enjoying today.

Since I love making easy main dishes, this is a no-brainer!

And the best part of making a sweet potato & asparagus frittata is the flavors blend well for breakfast or brunch. My keto friendly family and friends will also be happy with the lower carb and calorie calculations. The combined nutritional benefits of sweet potatoes & asparagus are impressive also.

Benefits of Sweet Potato & Asparagus

Sweet potatoes are rich in beta carotene, an antioxidant thought to help fight cancer and improve vision. It is a good source of fiber (about 3 grams per 3 ounces) Vitamin A, B6, and C, while also providing a portion of every amino acid needed to build protein except hydroxyproline.

What’s good to know about vitamin B6 is it is responsible for over 100 enzyme actions responsible for metabolizing protein. It is helpful for the heart because it balances homocysteine levels in the blood. Not only that, but it builds the immune system by forming lymphocytes and builds blood by helping produce hemoglobin (the molecule that carries oxygen through the blood) (1) B6 is important for cognitive function and neurotransmitter function too!

One cup of chickpeas contains the highest amount of B6 at 1.1mg/serving followed by beef liver, tuna (0.9mg/serving), and salmon (0.6mg/serving).

Asparagus is rich in vitamin K and folate. Folate is vital for preventing neural tube defects in a growing fetus and is important for DNA reproduction. The natural form is called folate, while the synthetic form is called folic acid. Asparagus has good amounts of flavonoids that help fight cancer, lower blood pressure, and help fight bacteria and viruses (2)

God’s Plan in The Garden

I read about the benefits of garden plants and see precision in how God cares for His prize creation.

Yes, you and I are part of His prize creation. We are made in His image and likeness. Therefore, respecting and being good stewards of our bodes involves filling them with gifts from His designed garden. We can honor His gift of resilient bodies He gave us by sustaining and nourishing them with foods like these. Just as God prepared His Word to nourish our souls. Teaching our children and their children the same principles help them know God, and His goodness, while giving their cells the ability to fight disease as they age.

 “Only take care, and keep your soul diligently, lest you forget the things that your eyes have seen, and lest they depart from your heart all the days of your life. Make them known to your children and your children’s children

Sweet Potato & Asparagus Frittata

  • 1 1/2 Cups Sweet Potato (Grated)
  • 1 Cloves Garlic
  • 1 Cup Asparagus
  • 1 Cup Spinach
  • 2 Tsp Avocado Oil
  • 10 Eggs
  • 1/4 Cup Romano Cheese (Grated)
  • 1 TSp Onion Powder
  • 1/2 Tsp Paprika
  • Pinch Cinnamon
  • 1/2 Tsp Pepper
  • 1/4 Cup Almond Milk (Unsweetened)
  • 1 Tbsp. Oregano (chopped)
  1. Preheat oven to 375 degrees.

  2. In an iron skillet (or other oven compatibale skillet) sautee 1 cloves of minced garlic in 2 tsp avocado oil for about a minute. Add the chopped asparagus and cook until just tender about a minute. Salt to taste then remove asparagus to a bowl and set aside.

  3. In the same oiled skilled add the shredded sweet potato, paprika, cinnamon, and pepper. Mix spices and oil into the potato slightly and spread it over the bottom of the skillet and up the sides. Bake in the oven 15 minutes.

  4. Meanwhile prepare the eggs in a large bowl by adding salt, onion powder, a dash of pepper and 1 tbsp. chopped oregain. Then add the milk and whisk well.

  5. Once the potatoes have cooked 15 minutes remove them from the oven and pour the egg mixture over the potatoes. Spread the chopped spinach and chopped asparagus evenly over the eggs. Top with the shredded Romano cheese and bake for 15-20 minutes or until eggs are done.


I hope you enjoy your sweet potato & asparagus frittata! It pairs nicely with some quinoa & walnut bread if you have the patience and desire to benefit from fresh milled bread making. It is a time-honored skill children can learn alongside you. Maybe even, one they will treasure forever.
