Easy No Knead Bread, Fresh Milled

An easy no knead bread can be fresh milled with hard red wheat berries or made with regular unbleached flour. I’m not sure where this recipe originated, but I adapted it from two Youtubers, Jennie Can Cook and The Frugal Fit Mom.

Although this recipe, and the way I make it, is with fresh-milled wheat, you can use regular unbleached organic flour. I purchased five pounds of Simple Truth Organic Unbleached flour for a Teaching and Tasting Monday night and the bread turned out very nice.

I chose this route because I had used that same flour for many years and wanted this process to be doable for the average person. And purchasing and working with wheat berries, requires an investment of time and money. Plus, you need a grain mill to grind it for flour.

So, $5.99 for an organic bag of flour makes more sense for the purpose of a teaching and tasting. I made two loaves of bread and 60 tortillas. That is a pretty good deal! There are no pesticides or fertilizers on this bread, and it’s not bleached.

You may think, “Why is this important?” And I’d have to respond, “We don’t know what the bleach and preservatives do to our gut bacteria or our overall health.” The 100% whole grain bread I use for my class as a demonstration of preservative power is still free of mold after ten months.

Bread on a shelf lasting 10 months without mold scares me for all of us. The good news is we don’t have to participate in the deception any longer. We can splurge a little on the flour and create our own artisan masterpieces. We may find in the process; we don’t have a gluten sensitivity after all.

Maybe it is just a mono-diglyceride, sterol sulfate, ammonium sensitivity. By the way, I’ve read flour will go rancid 30 days after opening if it is not refrigerated. So, remember that when buying and storing your flour.

I personally like to take it a step further and use fresh wheat berries, griding them up in a grain mill and using them right away. The leftover flour can be stored in the freezer 6 months or the refrigerator 1 week.

Benefits of Baking Easy No Knead Bread

Well obviously, a big benefit is, it’s easy and it’s free of pesticides. You mix four ingredients, cover with plastic and let it set a minimum of three hours or a maximum of 24 hours. The countertop is fine, and there is no need for it to rise in a warm place. Timing of how long it sets depends on you and your schedule. I’ve waited 3 and it’s fine, I’ve waited 6 and it’s perfect. I didn’t have the patience to wait 24, so I don’t know how it tastes.

Other benefits for the fresh-milled grain include a decent amount of protein, a wonderful amount of selenium, vitamin E, B vitamins, zinc, magnesium, and manganese.

God’s perfect plan for the seed-bearing plant to nourish and sustain our bodies is present in the things He made.

And God said, “Behold I have given you every plant yielding seed that is on the face of all the earth, and every tree with seed in its fruit. You shall have them for food.”

It’s always exciting to me to see the love of God in the gifts he gives us throughout creation. Every plant yielding seed on the face of the earth is mind boggling. The kiwi alone can have up to a thousand seeds! The mustard seed that Jesus talks about in Mark chapter 4 is so small yet grows into a towering tree to house and feed the birds.

It is a parable describing how the kingdom of God starts very small with Jesus and twelve disciples yet spreads across the globe. Every tribe, nation, and language will see and hear of his great love. His power to work miracles in our lives and sow seeds of righteousness is also pretty impressive. 2 Corinthians 9:10 says,

He who supplies seed to the sower and bread for food will supply and multiply your seed for sowing and increase the harvest of your righteousness.

Yes! God’s great love is working through us and in us as we enjoy the fruits of every plant bearing seed and the greatest seed of all. . . His Word. The powerful Word that transforms lives, fuels loving service, and explodes into peaceful contentment beyond this world’s understanding.

It too, is a gift like the seeds in the very first garden that keep on giving, century after century. I don’t know about you, but the similarities of physical and spiritual provision bring out humility and adoration in me when I witness such thoughtful planning.

Four Easy No Knead Bread Recipes

So, as we look at the wheat seed my friend, and you and I can take full advantage and have plenty to share with others. One 5-pound bag of flour makes 4 loaves of bread! We would normally spend $8 to $10 on one loaf.

Another fantastic part of this versatile recipe is you can use any of the recipes above to make English muffins, too!

Easy No Knead Bread, Fresh Milled

  • 3 Cups Fresh Milled Hard White Wheat Flour
  • 1 1/2 Teaspoons Salt
  • 1 Teaspoon Yeast
  • 1 3/4 Cups Warm Water
  1. Combine the flour, salt, and yeast in a medium mixing bowl

  2. Add the water and stir well to incorporate the liquid.

  3. Cover with plastic wrap and let sit a minimum of three hours on the countertop. No need to place in a warm spot. You can let it sit longer 6, 8, 10, or 24 hours.

  4. After letting it set the desired time, remove the plastic and place the sticky dough onto a lightly floured surface. Shape the dough lightly with your floured fingers, cover with a towel and let sit 30 minutes.

  5. Heat oven to 450 degrees while your dough is resting. You can place bread pans or whatever crock you have in the oven while it heats.

  6. After 30 minutes, I transfer the dough onto parchment paper and place it in the heated pan. Bake covered 30 minutes, then uncover and bake 15 minutes more.

  7. Cool completely before slicing. Store in a zip lock bag in the refrigerator for up to a week.

If you are using Unbleached Organic Flour Use the following ingredients:

3 cups of organic unbleached flour

1 teaspoon salt

1/2 teaspoon yeast

1 1/2 cups warm water (110-115 degrees)

(If you want more fiber and protein, use 2 1/2 cups flour, 1/2 cup of ground flaxseed, and 2 tablespoons of chia seeds).


Easy No Knead Bread— Taken up Several Taste Notches!

There are fun ways to add to this basic recipe and create your own flavor sensations. The following additions below will be just as easy and maybe even more delicious than the two above!

No Knead Bread

No Knead Cinnamon Raisin

This is not my favorite choice for fiber or protein, but I am trying to make it as easy as possible for the MetS Busters group I am coaching. I’d use a whole grain bread in place of the unbleached white flour to add more fiber and protein. But as an alternative to store-bought bread with hazardous chemicals and preservatives, it is the better choice.

You make it, you know what’s in it.

You can also remove 1/2 cup of the flour in this recipe and use the ground flaxseed instead. Adding the chia seeds for more protein and fiber works too.

Easy No Knead Cinnamon Raisin Bread

  • 3 Cups Unbleached Organic Flour
  • 1 Tsp Salt
  • 2 Tsp Cinnamon
  • 1 Tsp Yeast
  • 1 Tbsp Sugar
  • 1 1/2 Cups Warm Water
  • 1/2 Cup Raisins
  1. In a large mixing bowl, combine the flour, salt, yeast, cinnamon, and sugar. Mix well with a whisk add the raisins and warm water.

  2. Mix well until all the flour and water are combined into a soft dough

  3. Cover with plastic and let it sit on the counter all night or while you are at work (6-8-10-or 12 hours)

  4. Preheat oven to 450 degrees

  5. Get your loaf pan or crock ready and line it with parchment paper.

  6. Place the dough in the loaf pan and cover with another loaf pan. Bake covered 30 minutes.

  7. Remove cover and bake another 15 minutes.

  8. The paper will allow you to remove it from the pan in a couple of minutes. Let it cool well before slicing and store any leftovers in the refrigerator. When ready to use a slice, toast or heat in the microwave 10 seconds to soften.


Easy No Knead Garlic & Cheddar Bread

Here is another version of the no knead bread that is healthier than a store-bought biscuit mix of cheddar and garlic. You’ll be impressed with the price and the ingredients when you calculate making 4 loaves of artisan bread for roughly $6!

No, it’s not the greatest as far healthy is concerned. However, when making healthier choices we want to avoid extremes. It does not have hydrogenated oils, trans fats, or harmful preservatives like the box brand offers.

In my book, that is always a win! Plus, I’m not eating the entire loaf or eating it every day.

Easy No Knead Garlic & Cheddar Bread

  • 3 Cups Unbleached Organic Flour
  • 1 Tsp Salt
  • 1 Tsp Garlic Powder
  • 1 Tsp Yeast
  • 1 Cup Cheddar Cheese (1-1/4 cups)
  • 1 tsp Parsley (Optional)
  • 1 1/2 Cups Warm Water
  1. Whisk the flour, salt, garlic powder, and dried parsley well. Add the remaining ingredients together in a large mixing bowl. If needed use your damp hands to incorporate all the flour and water.

  2. Cover with plastic and let sit 6 or 8 or 10 or 12 hours while you sleep or go to work. Shortest time 6 hours longest time 24.

  3. When ready to bake. Preheat oven to 450 degrees

  4. Place parchment paper in a loaf pan and place your prepared dough into the loaf pan. Cover with another pan and bake for 30 minutes.

  5. Remove the lid after 30 minutes and bake another 15 uncovered.

  6. Use the parchment paper to remove it from the loaf pan after a few minutes, but let it rest until cooled completely before slicing. It will become crumbly if you don't.

  7. Store Leftovers in the refrigerator

Getting Started for A 40-Day Sugar Fast

Welcome to the 40-Day Sugar Fasting Challenge! Getting started for a fast on the right foot is important for success. It can also be intimidating, so let’s take the fear of failure off the table from the start.

First off, you are not a failure if you eat sugar. This is good news, right? You and I may come into a new year with high expectations and begin a fast (or change of life) strong. Then we fizzle out when we don’t see the results, we want in the first week.

Therefore, clear expectations are very important to getting started on the right path. So, here are my top five tips for staying the course for a successful sugar fast.

5 Tips for Getting Started & Staying the Course

1. Clarify Your Why

The main reason I want to fast from sugar for 40 days is________. You may want to have less sugar spikes and rapid drops causing lethargy and brain fog. Or you may connect stiff, achy joints and muscles to the consumption of high sugar items and not want the pain anymore. Whatever the reason is for you, determine the reason and write it down somewhere and post it so you will see it every day.

I’ll tell you why I did this journey last year. I woke up one morning and could not move the middle finger of my right hand off my palm. I had to take the fingers of my left hand and force it back into position. This came alongside excess chocolates at work and dairy. I decided to remove both for a period of four weeks to see if the stiffness would go away. When it did go away, I asked God to help me remove my desire of sugar for good. I didn’t want to be dominated by any substance but led by the Holy Spirit.

Everything is permissible for me,” but not everything is helpful. “Everything is permissible for me,” but I will not be brought under the control of anything.

2. Decide What Makes the Journey Worthwhile

The next step in getting started is to decide what makes this journey worthwhile. I picture myself waking up in the next few weeks free of morning stiffness. I’m playing with my grandchildren and chasing them around the house without hindrance. I’m also meeting friends at the YMCA and working out, and the activity helps me feel even better emotionally!

Stress is reduced and coping mechanisms are balanced. Before you know it, I’m going for a walk instead of reaching for a piece of candy or pie! I like this dream so much; I’m going to keep it in the forefront of my mind. Maybe I’ll put an old picture of me playing next to my “Why” statement so I can see it every day.

3. What Am I Facing if I Don’t Do Something?

If I don’t try this 40-day sugar fast now, I am facing more sugar spikes and lows. It doesn’t matter if I am a normal weight or not, if my pancreas is repeatedly stressed like this and releases a huge bolus of insulin every time I indulge, it will wear out! The signs of lethargy and brain fog are a true testament to this happening.

Plus, I’ll be one of those stiff unhappy ladies who gripe and moan about their pain all the time. I’ll stay home more, do less and get bored. When I get bored, I eat. When I get sad, I eat more.

Wait! Who’s in control here, my flesh or my spirit?

You and I can imagine this scenario too, right? We can pray for a change of heart and a new mindset. Remember, our Father’s desire is to give us good gifts. So, it’s a good gift we are asking for, He will give it.

but God is the strength of my heart,

4. Begin the Pantry Makeover

Before the fasting begins it may be helpful to remove all temptations from the pantry. One way is to read labels carefully and pay attention to “added sugars” I say added sugars because some foods have naturally occurring sugar (or glucose) and will be considered sugar. However, now manufacturers are responsible for listing all the added sugars in the item as well.

Also, be aware of the sneaky names of sugar on the ingredient labels. Obvious names like beet sugar, syrup, molasses, honey, are present and we recognize them as sugar. However, names like dextran, maltose, turbinado, and others we may not be so familiar with.

We don’t have to waste the products; we can always donate boxes of sugary items to your local food pantry or blessing box. Check out the graphic below for some alternate names of sugar so you become familiar with them.

5. Stock Up on Fresh Fruits & Vegetables

Stocking up on fresh fruits and vegetables helps you be prepared for the days ahead. Although I can’t find the proof, it makes sense that when all of our cells are satisfied at a microscopic level, we will have less cravings. Plus, consuming fruits may also help you through the withdrawal symptoms that occur.

If it gets really bad, you and I may even need a Tylenol for headaches. While we’re at it, we can add some calming lavender and chamomile tea for irritability.

Final Thoughts on Getting Started

Lastly, but most certainly not least, is find a prayer group to help support what you are doing. I am putting a Facebook group together and offering daily prayer and support. You may join the group if you are attending the challenge in 2023. Membership closes at 9pm Tuesday February 21, 2023. The Gift of Love

As I continue to grow in my faith, I see no act of love is too small. Last night, a small group from my church went to sing Christmas carols to a few of our shut-in members. As I witnessed the smiles and slow seeping tears from the recipients of this gesture, I humbly realized their hearts were refreshed through us.

Comfort and joy are derived from small acts of love. A visit, a song, a card, or a phone call can relieve the weight of despair on a lonely soul. Moreover, it requires very little effort on the part of the giver.

In the apostle Paul’s letter to Philemon he says,

“I thank my God always when I remember you in my prayers, because I hear of your love and of the faith that you have toward the Lord Jesus and for all the saints, and I pray that the sharing of your faith may become effective for the full knowledge of every good thing that is in us for the sake of Christ. For I have derived much joy and comfort from your love my brother, because the hearts of the saints have been refreshed through you.”

(Philemon 1:4-7)

Paul was hoping to be delivered from the chains of prison to be with his fellow saints. Our saints are hoping for a reprieve from health issues so they can join us again. In the meantime, they relish our prayers and any contact we can offer.

Although my small group visited shut-ins as a loving service to them, every single one of us were refreshed in Christ by going!

It’s proof my friend, when following the lead of the Holy Spirit, the gift of love works both ways!

The Gift of a Pure Heart

As I’ve gotten older, I realize a renewed mind and spiritual health begins with God’s example of unselfish love. Like, Him, it is steadfast and immovable.

When you and I follow Him, our love can look the same. 1 Timothy 1:5 tells us it flows from three things:

1. A pure heart

2. A good conscience

3. Sincere Faith

Putting aside everything else and focusing on His example allows us to pray for a pure heart.

A scripture I often pray when the pressure is on and I’m not feeling love, is:

“Create in me a pure heart, O God, and renew a steadfast spirit within me” (Psalm 51:10 NIV)

A good conscience is helpful in showing steadfast love, too. So, when the Holy Spirit prompts me to act on behalf of someone, speak encouragement, or forgive for the 1000th time, I do it automatically.

Yeah, well, I pray to do it, and the more I pray, the more automatic it becomes.

Sincere faith is either there or it’s not. Although, I’m not always “feeling it,” I know that lack of feeling makes me do a heart check. Also, I know I will never do it perfectly, but I sure want my conscience pricked to remind me to do so! I talk more about that topic in Holding Fast to The Good article.

We are known by our fruit, right? The fruit of the Spirit is love, joy, peace, patience, kindness, goodness, faithfulness, gentleness, and self-control. (Galatians 5:22-23)

The Gift of Eternal Life

For me, sharing God’s steadfast love occurs the most with family, friends, writing a blog, and teaching sassy GA’s (Girls in Action).

It’s the most active path to spiritual health I can think of for myself and them!

Recently, I asked my 5th and 6th grade GA’s, “Why did Jesus have to become a man?”

The quick and cheeky response from one girl was, “So he could die on the cross, duh!”

I responded, “Well, that’s true, but that is not the answer I’m looking for.”

Another bold and impatient response followed, “To forgive us for our sins, duh!”

Ignoring the disrespectful attitude, I silently pray for God to guide me in gentleness and self-control.

The child does see the need for salvation, and she understands we all sin. Yay, for getting that clear message from all her church visits and vacation bible schools over the years!

There is hope this message of good news and the gift of eternal life becomes real to her someday. Although there is no evidence of budding fruit and the plant is still a little weak, the seeds are planted and well-watered.

With the guidance of the Holy Spirit, hopefully she realizes love is at the heart of Jesus becoming a person. She can feel tenderly cared for and internalize this message.

I explain to the girls how God loves us so much he had to send a perfect and holy person to earth and accept the punishment sin deserves.

There was no human being capable of taking on the sin of the world. It had to be born on the shoulders of God, Himself (Jesus, who is fully God and fully man).

That’s why the heart of the gospel is,

“For God so loved the world that he gave His only begotten son, that whoever believes in him shall not perish, but have eternal life.” John 3:16

Although, I had to throw a few “Duh’s” back at her in our musical candy game, my heart softened when the same cheeky girl wrote this verse on the whiteboard before she left for the night.

There is some budding fruit of God’s love in her heart and mine after all!

My friend, knowing how much God loves you and me is the key to spiritual healing and health too!

 It’s what drives us to care for difficult people who are not easy to love. I’m still learning and growing as God leads me. I’d love to be sounding board and resource for you, too!

The Amazing Miracle Body

When I think about the amazing miracle body God gifted you and I with, I can’t help but think about king David saying he is “fearfully and wonderfully made”!

I long to encourage and empower you to overcome chronic conditions that zap your strength, steal your energy, and alter your thinking. Just take a few minutes to grasp how every aspect of your physical and spiritual health interacts with one another. It is evident when looking at how all the human body systems work together.

The chronic conditions of dementia, heart disease, diabetes, and autoimmune disorders are a result of underlying inflammation. Studies are showing this chronic inflammation is a result of our environment and what we are eating on a daily basis. God’s perfect plan for our sustenance and nutrition were carefully thought out too!

We are divinely made in the image of God and meant for miraculous purpose! Let’s take a closer look at these wonderful systems.

We are not accidents of random processes and evolution! We were thought out and carefully planned as image Barrers of our mighty God. The depth of these intricate systems reveals His thoughtfulness, mastery, and divine nature. I am humbled and continually amazed at how the body works to maintain and restore function each day. The intentional eating series emphasizes how we care for this beautiful gift of glory.

The Gift of Peace

Christmas brings a mixed bag of emotions for many people. Sometimes the gift of peace and joy mingle with sorrow and grief.

If you’re confused and having trouble finding peace today, I pray you find rest in the promise of your obedience.

In it, you may find your shalom, an indescribable ability to be content in all circumstances.

Jesus said:

” Behold, the hour is coming, indeed it has come, when you will be scattered, each to his own home, and will leave me alone. Yet I am not alone, for the Father is with me. I have said these things to you, that in me you may have peace. In the world you will have tribulation. But take heart; I have overcome the world.”

” Peace, I leave with you; my peace I give to you. Not as the world gives do I give to you. Let not your hearts be troubled, neither let them be afraid.”

(John 14:27)

Here is what I’ve witnessed in myself and others over the years:

  • 1. Peace does not mean freedom from pain, sorrow, tension, anxiety, difficult relationships, or doubt. It is finding contentment with who you are in the midst of it all.
  • 2. Fear is a tactic of the devil to steal peace and disarm you from your purpose.
  • 3. Time does not heal all wounds, Jesus does.
  • 4. People will reject you more if you faithfully follow Jesus, ask for the peace only He can give to do it anyway.
  • 5. Emptiness in your soul will never be filled with food, intimacy, drugs, money, material things, or alcohol. It only disappears with full surrender to Jesus.

The Gift of Peace is Jesus

For to us a child is born, to us a son is given; and the government shall be upon his shoulder, and his name shall be called Wonderful Counselor, Mighty God, Everlasting Father, Prince of Peace.”

Isaiah 9:6

The names of Jesus in Isaiah chapter nine reassure me God is in control. The eventual plan of His mercy and grace is for those who accept Him to be restored to right relationship with Him.

It’s a gift of peace deep in our souls only the Prince of Peace can bring.

Sinful lives you and I live daily, and the curse of the garden, will have no power to separate us from God ever again. However, it is not the kind of peace the world gives. We still experience grief, sadness, loss, and conflict with others.

We have to live in the tension of our secure relationship with God and our longing for others to know Him. Living peacefully with others to our best ability looks a little different too. We can honor others, while still sharing truth in the following ways:

  1. How we respond to dishonorable behavior and harsh words
  2. How we act towards other people
  3. How we talk to people
  4. How we look at other people

Jesus responds to dishonorable behavior by asking questions and telling stories. He gets to the heart of the situation and brings light into the darkness. We can too!

New Testament accounts show our Wonderful Counselor treating the least of these with dignity and respect. Calling simple fisherman, tax collectors, and sinners to follow him establishes their place of honor for eternity (Rev. 21:14)

Our Mighty God, who became a baby and grew up a poor and humble servant, talks to people with compassion and respect.  Following His example, we can put pride aside and see others as equals.

The Everlasting Father looked at people through the eyes of mercy and saw them as image bearers of Himself. So, we can joyfully do the same.

The Gift of Peace: Living in the Spirit

“Repay no one evil for evil, but give thought to do what is honorable in the sight of all. If possible, so far as it depends on you, live peaceably with all.”   (Romans 12:17-18)

Although, I know as a Christian, I am not going to intentionally return evil for evil. I find myself talking about those who hurt me to my closest inner circle.

It may be to my husband who doesn’t know how to handle my ugly cry, or my mom and dad who’s been in my shoes.  Do you find yourself doing that too?

“As far as it is possible live peaceable with all,” is a statement from God’s word to which my rebelling heart sometimes cries, Ok, how?

How do I let ignored texts and phone calls roll off and not take offense?

The truth is, when weeks go by and I can’t spend time with those I love most, I feel rejected and unloved. It may not even be true, but it’s clear where I fall in the list of priorities.

My heavenly Father whispers deep into my soul, “Yes, daughter, I feel your pain, because I remember you doing the very same thing to me.”

I remember it too.

How sobering to be in a tiny speck of my Father in heaven’s shoes.

Moreover, how freeing it is when my heart understands what the Holy Spirit is telling me!

He gently reminds me over and over, “whoever loves son or daughter more than me is not worthy of me.” (Mathew 10:37b)

I am living in the flesh and not according to the spirit. I am reacting to unmet desires and placing my love for people above God.

“For those who live according to the flesh set their minds on the things of the flesh, but those who live according to the Spirit set their minds on the things of the Spirit. For to set the mind on the flesh is death, but to set the mind on the Spirit is life and peace.”

The gift of peace comes into my heart when I release my unmet desires before the Father and rightly adjust my own priorities. I set my mind on Jesus and my focus on why He came into this world in the first place.

He came to restore me and you to right relationship with God the Father. It’s a mistake to think He came to bring peace on earth, or within our own households (Mathew 10:34-39)

But as far as it is possible, you and I can live peaceably with all.

So, we pray.

We call upon the Giver of Life to silence any raging thoughts and make them obedient to Christ Jesus. Help us treasure every moment with loved ones without expecting them to fill an emptiness in us they will never be able to fill.  Remind us to reach out in love in all circumstances.

Most of all, if there is any lingering resentment present, we pray it vanishes as the love of God fills us to overflowing as peace fills our hearts.

Turmeric & Pumpkin Power Bowl

  • 2 Cups Quiona
  • 6 Mushrooms
  • 1/4 Cup Onion
  • 2 Cloves Garlic
  • 1 Tsp Ghee
  • 2 Tsp Turmeric
  • 1 Tbsp Pecans
  • 1 Tbsp Pumpkin Seeds
  • 2 Tbsp Parsley
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper
  1. I precook my Quiona on my preparation day so it is ready to use throughout the week.

  2. In a skillet sauté the cleaned and chopped mushrooms in the ghee (or butter) until tender, about 1 minute. Add the garlic and onions next and sauté another minute.

  3. Use a food grater to mince the fresh turmeric root (yes, use fresh!)

  4. Add the pumpkin seeds and pecans and stir well.

  5. Serve on a plate and enjoy or top with fresh chicken breast or an egg.

A Gift of Joy

The gift of joy is the most satisfying element in life, and it is free.

Everyone who thirsts may come.

He who has no money may buy and eat! It has no price.

Why do we spend our money on things that are not bread and labor for things that don’t satisfy?

Isaiah says, “Seek the Lord while he may be found, call upon him while he is near”

When we return to the Lord, he has compassion on us and abundantly pardons straying thoughts, selfish desires, and pride.

The Lord’s Word goes out from his mouth and does not return empty but accomplishes all that He purposes.

“For you shall go out in joy and be led forth in peace; the mountains and hills shall break forth into singing, and all the trees of the field shall clap their hands.” (Isaiah 55:12)

The word of the Lord comes to Joseph in a dream to reassure him the child within his virgin betrothed is indeed from God. I can only imagine the relieved joy in his heart upon hearing this news.

Mary has remained faithful to him, there is no shame in this conception. Nor is there a need to divorce her quietly. The angel says, “She will bear a son, and you shall call his name Jesus, for he will save his people from their sins.” (Mathew 1:21)

 When Joseph awoke from sleep, he did as the angel of the Lord commanded him; he took his wife, but knew her not until she had given birth to a son. And he called his name Jesus (Mathew 1:24).

Joseph, son of David, his thoughts whirling about how to get out of this situation is led to accept all the Lord spoke through the prophet Isaiah.

“Behold, the virgin shall conceive and bear a son, and they shall call his name ‘Immanuel’ (which means God with us).  (Mathew 1:22-23)

The gift of joy is coming through his wife, and he is privileged to raise the Son of God. How quickly his thoughts of turmoil turned to dismay and wonder!

Although righteous, he did nothing to earn this highest honor. Even though his culture shuns the unknown circumstances of Jesus’ birth, and may question the purity of his bride, the gift of joy overrides doubt.

What gift of joy overrides the fear and doubt in your life today?

Let God’s thoughts over you and His reassurance of who you are in Him be the gift of joy in your heart today. Your spiritual health and wellness are of great importance to Him, and to me! Jesus came so we may have life abundantly, here on earth and eternally.

What needs to take place for you to experience joy for a lifetime? King David may have some ideas for you and me today.

A Gift of Joy for a Lifetime

I will shout to the heavens over you Lord, for you have pulled my face away from anxiety, fear, pain, and illness.

When I cry to you for help, you heal me.

You take my soul from the pit of hell and restore life to me.

I sing praises to you among my brothers and sisters in Christ and give thanks to your holy name, because your anger is but for a moment, and your favor is for a lifetime.

“Weeping may tarry for the night, but joy comes in the morning.” (Psalm 30:5b)

I take king David’s words of song in dedication to the temple and put them in my own words because God is worthy of extolling praise and has taken my drawn face out of the pit many times.

The foes of doubt, never measuring up, not being accepted fully by those I love, and physical infirmary pale in comparison to the gift of joy coming when all God’s plan is fulfilled.

The lowly shepherds relate to my occasional feelings of being the outcast. Taking care of animals night and day would be a low position in society.  However, it is thought the shepherds keeping watch over the flock by night were assigned to care for the sacrificial lamb to be slain (Wilson, 2012).

The perfect spotless lamb had to remain free of injury for the coming sacrifice. A heavenly calling and important job requiring diligence and commitment brought the angel of the Lord to their presence.

What has your face drawn and downcast today?

Pray this with me today:

God there is an emptiness on my heart that can only be filled by you. The loss of my loved one runs deep and at times sadness pulls me into a pit. Lord, please take my weeping and turn it to joy. I praise you for giving me the true spotless lamb who sacrificed all for me and restores life to me. I look forward to the day when I can rejoice with the one, I’m temporarily separated from, because we share a deeper eternal joy surpassing this lifetime. Give me the strength to continue your heavenly calling on my life that I may pursue you with diligence and commitment as the shepherds did.

In Jesus name I pray, amen.

Conviction, A Gift of Joy

Another surprising way God has of bringing us joy is conviction!

Although conviction has a way of bringing remorse and sorrow, once its power grieves the heart enough to seek repentance, there is a gift of joy-filled relief.

There is no more bearing the weight of guilt and shame.

In its place is the ability to say goodbye to selfishness that prevents healing in relationships. Conviction is bittersweet truth bringing lasting comfort, only the Word made flesh can do.

I see the nation of Israel under conviction in Nehemiah chapter 8. After seventy years of captivity, they are allowed to return to Jerusalem and rebuild its wall of protection.

On the day of completion all the people were gathered to hear the reading of the law (God’s Word). Many are hearing it for the first time and raising their hands in worship.

As the priests move among them explaining the words, Israel is moved to weeping and mourning their sin.

{And Nehemiah, who was the governor, and Ezra the priest and scribe, and the Levites who taught the people said to all the people, “This day is holy to the Lord your God; do not mourn or weep.” For all the people wept as they heard the words of the Law.  Then he said to them, “Go your way. Eat the fat and drink sweet wine and send portions to anyone who has nothing ready, for this day is holy to our Lord. And do not be grieved, for the joy of the Lord is your strength.” Nehemiah 8:9-10}

The night of Jesus’ birth the lowly shepherds witnessed a multitude of heavenly hosts praising God and saying, “Glory to God in the highest, and on earth peace, among those whom he is pleased!” (Luke 2;14)

Elevated to a position of grace and favor, they made haste to find the baby lying in a manger. “And the shepherds returned, glorifying and praising God for all they had heard and seen, as it had been told to them.”

God wants to restore you and I to the place of grace and honor too.

He makes a way for us, just like he did Israel and the lowly shepherds. It is through the Word made flesh, Jesus.

Once we see and understand this, the joy of the Lord becomes our strength. Conviction, my friend, is the gift that brings us to Him.

Soul-Filled Gift of Hope

Do you ever get frustrated planning for the holidays? Or does the gift of hope get lost in the pressure of expectations?

If you are like me, you take time to choose a special gift and pay careful attention preparing a loved one’s favorite dish. All the while, you’re really wondering if they’ll even show up.

Pressure mounts when you can’t find the item you need or the ingredients that make your recipe just right.

In addition to figuring out the month’s itinerary, work still has to be done, errands ran, and bills paid.

If we’re not careful, we can lose sight of the hope of the season.

“The Lord brings the counsel of the nations to nothing; he frustrates the plans of the peoples. The counsel of the Lord stands forever, the plans of His heart to all generations.” (Psalm 33:11)

“Our soul waits for the LORD; He is our help and our shield. For our heart is glad in him, because we trust in His Holy name. “

The gift of hope is coming! 

As you and I begin to celebrate the advent of our Savior’s birth, we can rest assured in God’s steadfast love. 

Overthinking everything else dims the brilliance of this perfect gift in our hearts.

The hearts of our loved ones are not won by special gifts, or by our skills in the kitchen.

The gift their hearts truly crave is Jesus, since God placed eternity on the heart of all mankind.

May you and I let the greatest gift be resting in the shield of his protection and love. The gladness of our hearts will illuminate the gift of hope for everyone around us.

God’s love is indeed steadfast!

Hope Deferred (Luke 1:1-24)

You, O Lord are my hope.

Even when you say no.

Even when the root of bitterness rises, you gently remind me to trust you.

You incline your ear to me and save me from my own thoughts.

My rock of refuge, I continually come. Just as the Psalmist turns to you when his strength is spent, so do I. Upon you I have leaned from before my birth, you are He who took me from my mother’s womb. My praise is continually of you

(Psalm 71:6).

God’s plan for you and me is clear from birth too. From scripture we see his love for His own.

His plan for Zechariah and Elizabeth to have a son was delayed, but oh so glorious. The hope deferred was so overwhelming it brought disbelief.

Yet it still came.

The multitude of people were praying outside at the hour of incense when the angel Gabriel appeared to Zechariah.  Five months later, she who was called barren conceived a son. For nothing is impossible with God.

The bitter self- disgrace was removed from Elizabeth’s thoughts. She kept herself hidden saying, “Thus the Lord has done for me in the days when he looked on me, to take away my reproach among people (Luke 1:25).

Reproach is a cause or occasion of blame, discredit, or disgrace.

What is an area of your life that needs blame or disgrace removed?

Let the hope of the Lord remove it today. Remain steadfast, righteous, and faithful as God works through you and around you.

The miracle child of Zechariah and Elizabeth is to pave the way and ready a people for Jesus. You, sweet friend, have been chose too.

In your circle of influence, you prepare children, friends, and family to see the beauty of hoping in Jesus too.

The impact on their tender hearts will have eternal rewards!

Gift of Hope in The Word Made Flesh

“My Soul longs for your salvation; I hope in your Word.” (Psalm 119:81)

The hope of salvation rests on the Word of God. Coming to fruition is the everlasting covenant promised to king David, and revealed to the virgin in Bethlehem.

I imagine Mary, breathless with fear as the Word of God comes out of the mouth of Gabriel. Assurance is hers, as it will not return empty, but accomplish all that He purposes (Isaiah 55:11).

“You will conceive in your womb and bear a son. He will be great and will be called Son of the Most High. And the Lord God will give to him the throne of his father David, and he will reign over the house of Jacob forever, and of his kingdom there will be no end.”

(Luke 1:31a, 32-33)

A word of assurance and a true gift of hope in God’s word.

In the beginning was the Word, and the Word was with God and the Word was God. He was with God in the beginning. And the word became flesh and dwelt among us, and we have seen his glory, glory as the only Son from the Father full of grace and truth.

(John 1:1,14)

The promised Messiah. The Word becoming flesh. Is coming through her, how can this be?

Simple, dear Mary, the power of the Most high will come upon you.

And Mary said, “Behold, I am the servant of the Lord, let it be to me according to your word.” (Luke 1:36a)

You and I don’t rest in fantasy or empty promises from those who may disappoint us. Like Mary, we can rest in the living Word of the Most High who humbled himself to become a babe in the womb.

It’s the hope of the Word made flesh our souls long for, because in it is salvation. Our spiritual health depends on applying scripture’s truth to our lives each day.

The Gift of Hope in Obedience

When I get some amazing news, I can hardly wait to tell my family. I make haste to grab my phone and tell my husband, my daughters, or my mom and sister!

Mary is no different. When the angel departed from her, Mary arose and went with haste into the hill country of Judah. With the hope of the angel’s words fresh in her heart, she entered the house of Zechariah and greeted Elizabeth.

Confirmation of Elizabeth’s condition combined with her excited proclamation of, “Blessed are you among women, and blessed is the fruit of your womb! And why is this granted to me that the mother of my Lord should come to me?”, fills Mary with rejoicing humbleness. (Luke 1:42-43)

As the infant, John, leaps for joy in Elizabeth’s womb, the Holy Spirit fills her to quiet the emotions this enormous task places on the young virgin.  “Blessed is she who believed that there would be a fulfillment of what was spoken to her from the Lord.” (Luke 1:25)

All amazing news is a gift of hope from God we can’t wait to share.

It fills us with the hope and brings us closer to our Savior. Mary’s song of praise represents how our hearts can accept and share the hope of Jesus.

  • *My soul magnifies the Lord
  • *My spirit rejoices in God my Savior
  • *He looks on the humble state of His servant
  • *He who is mighty has done great things for me
  • *His mercy is for those who fear Him
  • *He has shown strength in His arm
  • *He has brought down the mighty from their thrones
  • * He has filled the hungry with good things

Although the task God calls Mary to do is above and beyond any you and I are called to do, we can still capture the spirit of being called and glorify the Lord humbly in obedience.

For some of us, that may mean walking away from sin and committing ourselves to the Lord. For others, it may require removing our pride and apologizing to someone we’ve wronged.

Whatever the call is upon our lives, make haste to rejoice like Mary and Elizabeth, and move forward in the hope of Jesus clearing the way for belief.

The Gift of Hope in Salvation

God of our salvation and hope of all the ends of the earth and of the farthest seas.

O you who hear prayer, to you shall all flesh come.

By awesome deeds you answer us with righteousness.

Blessed is the one you choose and bring near, to dwell in your courts! (Psalm 65:5b,2,5a,4)

The blessed hope of a son arrives for Zechariah and Elizabeth in the joyous presence of friends and family. Filled with the Holy Spirit, Zechariah’ muteness dissolves into a glorious prophecy for his son:

  • *Blessed is the Lord God of Israel, for he has visited and redeemed His people
  • *Raised a horn of salvation for us
  • *Spoke from the mouths of his holy prophets from of old, that we be save from our enemies and those who hate us
  • * We being delivered from the hands of our enemies might serve Him without fear, in holiness and righteousness
  • *And, the child John, will be called the prophet of the Most High; for you go before the Lord to prepare his way
  • *Give knowledge of salvation to His people in the forgiveness of their sins
  • *Because of the tender mercy of God
  • *Giving light to those who sit in darkness to guide our feet in the way of peace

(Luke 1:67-79)

The enemy who hates you is Satan, and he wants you to stay bogged down in self-loathing lies.

Lies that invade your thoughts about yourself, your friends, your family, and your coworkers.

The hope of his defeat is herald by John and the angels, the Most High becomes a babe, lives a sinless life, and suffered and died on a tree so you and I can live free of Satan’s lies.

Despite walking among those who are still living in darkness, Jesus makes a way for peace to enter our souls. May the God of our salvation who brings hope from the farthest seas speak softly to your spirit today, friend. Rest in knowing, “Oh you who hear prayer, to you shall all flesh come!”

#1 Way to Use Leftover Turkey–Turkey Tortilla Soup

I love to make a Turkey Tortilla Soup. It’s as simple as using my Chicken Tortilla Soup-Autoimmune Style and substituting the chicken for turkey. This soup base has a puree of boiled beets, carrots, onion, and garlic that make an amazingly tasteful broth for the soup. Best of all its anti-inflammatory, something we need after a little too much celebrating.

If you’re used to the old-fashioned way, and can tolerate tomatoes without inflammation, feel free to use a large jar of salsa in place of the beet puree. The recipe is easy and will be ready within the hour. Spice it up with some fresh or dried oregano, garlic, onions, and chopped zucchini. It’s delicious!

# 4 Turkey Pot Pie

Yes, easy leftover turkey pot pie is so good! All you have to do is combine 2 cups of chopped turkey in a large soup pot, add 2 bags of frozen mixed vegetables or your own leftover vegetables (corn, green beans, carrots), add 3 cups of broth bring to a simmer and add 1 cup of milk (I use plain almond milk) mixed with 2 tablespoons of flour, (or thickening regent of your choice), and seasonings (salt, pepper, onion powder). Once the liquid thickens, place onto your favorite pie crust and top with remaining crust. Bake according to Pie directions about 25-35 minutes at 350 is what I usually do. It’s so delicious.

5. Turkey Shepherd’s Pie

Replace the beef or lamb, in your favorite Shepherd’s pie recipe, with turkey. Combine the turkey with mixed vegetables, 3 cups of broth, spices, and flour milk mixture. Brink to a simmer until thickened, and then place in a 9×13 dish, cover with your left-over mashed potatoes and bake at 350 until heated through.

6. Buffalo Turkey Dip

Yep, this is going to go very well with some nachos! Combine 2 cups of leftover turkey with 1 teaspoon of cayenne pepper, 1 block of cream cheese, 1 can of green Chilles (with the juice) and 1/2 cup chopped onion. Heat on the stove or place in a small crockpot until ready to serve.

7. Mini Turkey Pizzas

A turkey mini pizza uses a tortilla wrap, cover with butternut squash sauce (baked squash, 1 clove minced garlic, 1 tsp salt blended in a blender) or your favorite tomato or yummy green pesto sauce, cover each tortilla with 1/2 cup shredded turkey, 1/2 cup red onion, and 1 cup chopped kale. Top with a sprinkle of aged parmesan, or Romano cheese, or a dab of mozzarella.

8. Turkey Frittata

Oh, so good. Line a oven-safe skillet with avocado oil, shred a sweet potato over the bottom about an inch thick, season with a little salt, paprika, and pepper. In a blender grate fresh turmeric and a teaspoon each of cardamom and pepper with 8 whole eggs. Blend well and pour onto shredded sweet potato. Add 2 cups of shredded chicken, 1/2 cup shredded cabbage or Brussel sprouts, 1/2 cup chopped orange or red peppers. Bake at 350 for 35-40 minutes or until eggs are fully cooked. Enjoy!

9. Turkey Cabbage Rolls

This is very tasty and delicious way to use your left-over turkey. In a pan, slightly boil 1/2 head of cabbage until just tender, about 20 minutes. Pull out of the water to cool until its ready to handle. Meanwhile, in a separate bowl, combine 2 cups of shredded turkey, 1/2 cup of onion, 1 tsp salt, 1/2 tesp pepper, 1 tsp oregano, and 1 clove of mince garlic, mix well. When the cabbage leaves are cooled, remove one and place a tablespoon or two of the turkey mixture into a leaf, roll it up and place it side down into a casserole dish. Continue until all the mixture is gone. Preheat oven to 350. Cover the cabbage rolls with 2 cups of cream of mushroom soup (I use 1 package of fresh chopped sauteed mushrooms in avocado oil, then combine 2 cups of broth and 1 cups of milk (I use almond) and 3 tablespoons of flour, mix while all are cold and add to the heated mushrooms, stir until thickened). Bake for 20 minutes or until heated through.

10. Turkey Avocado Cups

This refreshing and filling little appetizer looks great on a serving tray and is a nice treat during Saturday festivities. All you have to do is mix 2 cups of leftover turkey with 1 large, mashed avocado, 1/2 cup red minced onion, 1/2 red minced red pepper, and 1 minced clove of garlic, with the juice of 1 lime. Place a tablespoon of the mixture in some fresh baked phyllo shells and enjoy!

God’s Gift of Olive Oil

I love the gift of olive oil! Its many valuable uses, benefits, and flavor are worth sharing and enjoying every day.

“If he offers it for a thanksgiving, then he shall offer with the thanksgiving sacrifice unleavened loaves mixed with oil, unleavened wafers smeared with oil, and loaves of fine flour well mixed with oil.”

Leviticus 7:12

Olive trees have been around long before 5000 BC., one of God’s many gifts to man.

* Israel used it to mix with fine flour and present it to the priests as a first fruit offering. (Lev. 2)

* They used it for burning lamps in the sanctuary (Ex. 27:20)

* Wound healing (Luke 10:24)

* Annointed kings, prophets, and priests (Ex. 29:21, 2 Kings 9:1-3)

* Made cakes and bread (1 Chronicles 12:40)

They cold pressed the precious olive fruit to extract the oil and create their anointing oils, cakes, and bread. How simple life is when living off the land, yet also difficult. According to Bible History, the olives are ripe in September and are harvested and pressed for oil until November.

The branches are picked, and olives removed. They are placed on the stone surface and a large millstone is used to press out the oil. The Bible History site says the word for olive press is Gethsemane.

Oh, how the truest gift of Christ kneeling in prayer in such a place filled with history and purpose come to life!

What Makes Olive Oil a Wonderful Gift?

Olive oil makes the heart glad in more ways than one! It’s such a beautiful gift from God.

Olive oil is made of up of 80% monosaturated fat and 1-2 % polyphenols. However, the geographic location, and the way it’s processed makes a difference in retaining its precious properties.

Nutritional and antioxidant properties of EVOO are related to the presence and concentration of tocopherols, carotenoids, and phenolic compounds that greatly impact human health.

No seed oil (soybean, vegetable, corn, or canola) has these beneficial properties!

I’ll share more about benefits of olive oil tomorrow. Today, I want you to have this simple and delicious dressing to use each day on your salads.

Apple Cider and Vinegar Dressing

1 ounce apple cider vinegar

2 ounces Organic Extra Virgin Olive Oil

2 teaspoons of raw honey (optional)

1 pinch each, salt, pepper, onion powder, or your favorite herb.

Combine, mix well, and enjoy!

I use it on my Kale & Apple Salad and my Broccoli Cherry Salads
