Colorful Cauliflower/Carrot Frittata

Ingredients
  

  • 1 12 ounce Bag Cauliflower/Carrot Blend Frozen Vegetables (thawed)
  • 1 tsp Seasoning
  • 1/2 Cup Cottage Cheese Or Milk
  • 6 Eggs Or 8 if you need more for the week
  • 1/4 Cup Parmesan Cheese
  • 1/2 Cup Ground Beef You can use chicken, turkey, sausage, salmon, or whatever you have left over from the night before.

Instructions
 

  • Preheat oven to 375
  • Place vegetables in a dish and season with your favorite seasonings. I like onion powder, or Redmond's salt seasoning.
  • Add the ground beef or leftover meat of your choice (salmon/chicken/chicken apple sausage work well too)
  • Combine the eggs and the cottage cheese in a separate bowl and mix well.
  • Pour over the vegetables and bake at 375 for about 20 minutes or until eggs are done.
  • Top with the parmesan cheese and serve!

Notes

As you can see this recipe is very low carb and low fiber, so I would add a cup of quinoa or serve it with a slice of whole grain bread!
