You can use chicken, turkey, sausage, salmon, or whatever you have left over from the night before.
Instructions
Preheat oven to 375
Place vegetables in a dish and season with your favorite seasonings. I like onion powder, or Redmond's salt seasoning.
Add the ground beef or leftover meat of your choice (salmon/chicken/chicken apple sausage work well too)
Combine the eggs and the cottage cheese in a separate bowl and mix well.
Pour over the vegetables and bake at 375 for about 20 minutes or until eggs are done.
Top with the parmesan cheese and serve!
Notes
As you can see this recipe is very low carb and low fiber, so I would add a cup of quinoa or serve it with a slice of whole grain bread!
